Lomo Saltado is in itself a fusion plate between Peruvian and Chinese cuisine. The condiments, preparation and addition of rice shows Chinese influence in the plate, whereas the use of potatoes, tomatoes and fresh herbs such as parsley and red onions demonstrates the Peruvian base for this popular dish.

Arroz con Pollo is one of the staples of the cuisine of Lima. Herb infused rice and chicken with green peas, and small diced carrots add dimension and texture to the mix of herbs infused into the base of this plate. It can be garnished with fresh parsley and is best combined with a Papa a la Huancaina to truly raise the flavors of this Lima Classic.

Known amongst locals for centuries, this hen soup is a tribute to the early birds of the city, the midnight dwellers and the graveyard shift warriors.
